Hello 2018 October Goals

Happy October, everyone! October is a very busy month that includes Aids Awareness, Breast Cancer Awareness, Domestic Awareness, and deadlines for voting registration. With some much going on I dare not forget to say Happy birthday to all my Libras and Scorpios. With Autumn kicking into the swing of things it’s time to bust out the sweaters and start completing those last of the year goals before the new year is upon us. As always I’m making goals and crossing items off of my 1001 Project List. Which includes supporting our communities.  As I continue on my quest to support businesses owned and ran by People Of Color (POC) I’m glad to see that I’m not the only one putting in the effort.

During each week of October I will try to showcase at least POC owned business to make sure I am showing our communities support and giving them some exposure. I am also trying to build a local POC Business Directory for 2019 so if you know of some businesses please holla back! As you can see below I have a lot of things I want to do and I hope you all send positive vibes my way encouraging me to get them all done.  I can and I will accomplish my goals for October!  Wish me luck, y’all!

  • Adopt 1 new healthy eating habit

I have a two 30 day challenges planned that I am driven to accomplish, on top of that that hopefully will compliment each other and get me to where I need to be in my health. I am also seeking to get out of my depression mode and get back into the swing of things through meditation and writing. I know that if I stick to a plan I can do what I have set out to do, but it will only work if I stay active, take care of myself and don’t lose my head.  I have a lot want to do can a partial plan to do it all.? Hello June Goals 2018

It's June

Happy June and LGBTQIA Month! Happy birthday to all of the Geminis and Cancers out there. With June comes the summer and the beginning of half a year to go. And here I am once again, making goals and crossing items off of my 1001 Project List. I’ve become a little bit more relaxed with clearing items off my list due to the weird weather shifts and all of the allergies and illnesses that come along with it. As I continue on my journey to better and brighter things I still strive to be the change I want to see.

Hey April Goals 2018

It's April

Happy April and National Volunteer Month! Happy birthday to all my Arians and Taureans out there. April brings us one step closer to summer. As always I’m making goals and crossing items off of my 1001 Project List. The lists seem never ending and I love it! As I continue on my journey to better and brighter things I find myself wanting to create more opportunities and share information with my communities. 

I think I want to start posting information on events that are coming up and I think are worth a the time. During each week of April I will try to showcase at least 2 events to make sure I am showing our communities support and giving them some exposure.  As you can see below I have a lot of things I want to do and I hope you all send positive vibes my way encouraging me to get them all done.  I can and I will accomplish my goals for April!  Wish me luck!

March Review

The orginal plan was to stick to using my planner and that kind of fell apart which pretty much killed most of my other goals as well.  Hey you win some, you lose some.  I will definitely be giving it another try for a majority of the goals.  Let's celebrate the wins shall we?!?

WINS

I applied for 2 writing gigs.  I'm didn't hear back from either company so I am pretty confident those ships have sailed, but on the flip side I went for it and I'm proud that I stepped up my game. I filled out a few applications to a couple of universities only to conclude that that's not where I want to my career to be moving forward. Participating in a workshop or two is more than ideal so I'm putting together a couple of workshops and I'll get to pitching them to high schools and unis. 

Also on my win list, I have been posting on Instagram, trust I fell behind for a bit.  But I got right back on and I have to say I am pleased with myself. It was touch and go for awhile because My Instagram Stories wasn't working properly for a hot minute. 

Guess who finally got signed up for a gym membership and actually started going to said gym?  That's right, this lady right here!  This time next year I'm going to be benching on the rows! 

I got my taxes done, watched 2 TedTalks, tickets for fashion shows have been purchased and I'm about to send out a brunch invite for friends!  So all in all I am super proud of my progress.  I was able to complete at least 1 item on each of my categories.  That deserves a well earned glass of wine.

Hello March Goals 2018

Happy March and National Women’s History Month! Happy birthday to all my  Pisces and Aries out there. March marks the dawn of Springtime and new beginnings. As always I’m making goals and crossing items off of my 1001 Project List. Which includes supporting our communities.  As I continue on my quest to support businesses owned and ran by People Of Color (POC) I find myself feeling a little overwhelmed these days.

Though, I want to support as many businesses as I can, my bank account is crying out from abuse.  During each week of March I will try to showcase at least 1 item purchased from a POC owned business to make sure I am showing our communities support and giving them some exposure.  As you can see below I have a lot of things I want to do and I hope you all send positive vibes my way encouraging me to get them all done.  I can and I will accomplish my goals for March...verdad?  Wish me luck my y’all!

1001: Succulent Lemon-Thyme Salmon

1001 Project: Learning - Try 30 different recipes

Not too long ago I made my first dish of 2018 from a cookbook.  The recipe that I used came from The I Can’t Cook Book by Jessica Seinfeld. I attempted to make the salmon per cookbook directions and it turned out quite successfully. I no doubt have a few things that I will tweak in the future, but it tasted great. The world will be in shock when I tell you I actually I was able to shake off my no eating leftovers policy. What helped was that I had a plan and schedule of what I would eat with each fillet each day that week.  I even served my sister a piece and she was proud. I had never thought to broil fish before. Sure I’d fried it, baked it, and even ate it raw. It blew the doors off my proverbial oven when I realized that I could broil it.  I’m officially looking at other recipes to see what other pescado y mariscos can be broiled with seasonings.

Personally, I found that the salmon was not enough. I ended up eating the salmon with rice or in a salad. The thyme was better for garnish vs for taste. Next time I will use two other greens between the fish and lemon and leave that thyme alone.  Once I have experimented a bit and if I remember I will try to post a revamped recipe. In case you didn’t know I’m a full flavor kind of gal, so expect there to be several spices and an array of zest.
